Less salt in our food

Salt is the most widely used food additive in the world, and is used more that it should be in processed foods. Norwegian food manufacturers such as Mills, Nortura, Stabburet and Spis-Grilstad have joined forces to deal with the challenge of reducing our salt intake without losing the taste, texture, processing yield and long shelf life of their products.

From 2008 to 2011, these companies will collaborate with the Norwegian Food Research Institute and SINTEF Fisheries and Aquaculture in a knowledge-building project that also involves users. The project will identify and solve the technological and economic challenges involved in maintaining the shelf life and texture of meat and fish products with a lower salt content.
